Why Instagram removes your empty lines
Instagram keeps a single line break but treats a line with nothing on it as stray space and removes it. Two paragraphs separated by an empty line end up touching, and a caption written to be skimmed turns into a wall of text.
The fix is to make the empty line not quite empty. This page puts one invisible character on each blank line. The line looks empty on every phone, but Instagram sees a character and leaves it alone.
It also removes spaces at the end of each line. They're invisible, Instagram trims them anyway, and on some versions of the app a space before a line break takes the break with it.
Which invisible characters work
Everyone who fixes this uses one of a handful of characters. Here's how they behave in captions today.

How to use it
Write your caption anywhere you like: Notes, a document, or the box above. Leave an empty line wherever you want a gap. Paste it into the box, check the phone preview, and tap Copy caption.
In Instagram, paste it into the caption field as it is. Don't add or remove lines there: the app may trim them again. If you need to change something, change it here and copy it again. Running a caption through twice is safe; nothing doubles up.
